Strawberry Banana Waffles (GF option)

These waffles are SO delicious and quite healthy. Multigrain, lots of fruit and low sweetener!
  • ¼ cup banana mashed
  • 1 cup water
  • 2 tbsp melted coconut oil
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp baking powder
  • ½ cup whole wheat pastry flour OR gluten free flour blend
  • ⅓ cup almond flour*
  • ⅓ cup oats (or oat flour)
  • ½ cup chopped strawberries
  1. Whisk together the banana, water, oil, syrup, vanilla, and baking powder in a mixing bowl.
  2. Mix flours/oats together and add to wet mixture. Stir until well combined, smashing lumps against the side of the bowl. The batter should be easy to pour, but thick and not too watery.
  3. Fold in strawberries.
  4. Heat up waffle iron, allowing batter to rest for about 5 minutes.
  5. Liberally spray iron and pour in appropriate amount of batter for your iron. (You will need to spray each time)
  6. Cooking time will vary based on waffle irons, but I like to keep mine in a bit longer to make sure they are crispy.
  7. Place on wire rack to cool and so they will not get soggy. Continue until all the batter is used up.
  8. Uneaten waffles can be stored in the freezer and can be toasted directly from the freezer!!
*Sub with more GF flour, wheat flour, or oat flour to keep these nut free (I have not tested this)
